Satay Noodles
The most common noodle on Xiamen streets. Satay paste simmered with peanut sauce into a rich, spicy broth. Noodles topped with tofu puffs, squid, lean pork, and pork liver — customizing your add-ons is the soul of satay noodles, as lavish or simple as you like.
Oyster Omelette
Fresh oysters + sweet potato starch slurry + egg, spread on a hot griddle and fried golden on both sides. Drizzle with Xiamen sweet chili sauce — the oyster’s brininess, the starch’s chew, and the egg’s richness all compete deliciously in your mouth.
Sea Worm Jelly
Not bamboo shoots — it’s sandworms (sea worms). Boiled, cooled, and set into a jelly, then cut into cubes and served with mustard soy sauce and pickled radish. Visitors recoil at the sight; Xiamen locals are hooked.
