Buddha Jumps Over the Wall
Mountain delicacies and sea treasures simmered in one jar. Abalone, sea cucumber, shark fin, dried scallop, pigeon eggs, flower mushrooms… dozens of ingredients slow-stewed in a wine jar for over ten hours. When the jar is opened, the aroma bursts forth — “The fragrance escapes the jar and wafts through the neighborhood; the Buddha smells it, abandons his meditation, and leaps over the wall.”
Fish Balls
Eel meat pounded into a paste, wrapped around a pork filling, boiled until plump and white, floating on the soup surface. Bite into the fish ball and the pork filling’s juices rush out first. Fuzhou fish balls have filling — a key difference from the unfilled Chaoshan-style fish balls.
