Crossing-the-Bridge Noodles
Originated in Mengzi, perfected in Kunming. A bowl of scalding chicken broth arrives at the table, a layer of oil sealing in the heat. In go the quail eggs, raw meat slices, vegetables, and rice noodles in sequence — watching the raw meat turn white instantly in the broth is the ritual of crossing-the-bridge noodles.
Steam Pot Chicken
A Jianshui purple clay steam pot with a central steam pipe. Steam rises through the pipe and condenses inside the pot into broth. The chicken is cooked without a single drop of added water — all the broth comes from condensed steam. The soup is clear as water, yet intensely rich.
