Guiyang is the capital of Guizhou, China’s mountain province where the Miao, Dong, and other ethnic minorities have shaped a cuisine unlike anywhere else. This is the land of sour and spicy: not the dry heat of Sichuan or the vinegar tang of Shanxi, but a lush, layered sourness from wild tomatoes, fermented rice, and pickled bamboo shoots. Every meal here is a negotiation between tang and fire.

Sour Soup Fish
The dish that defines Guizhou. A whole river fish is poached in red sour soup — a fermented broth of wild tomatoes and chili peppers that has been bubbling for hours. The result is bright, tangy, and deeply savory. It is served bubbling hot at the table with a dipping sauce of fresh chilies, garlic, and cilantro. Originally from the Miao minority, it is now Guiyang’s proudest export.
Huaxi Beef Noodles
From the Huaxi district south of downtown comes Guiyang’s breakfast champion. Slow-stewed beef shank is sliced over a bowl of springy rice noodles and flooded with beef bone broth. The real magic is the condiment bar: pickled cabbage, fresh mint, crushed peanuts, and a spoonful of chili paste. Every bowl is a custom creation.
Siwawa
Translation: “four dolls.” These are tiny rice crepe wraps — like spring rolls but unfried — stuffed with shredded potato, carrot, cucumber, and crushed peanuts. Dip each one into a small bowl of sour-spicy sauce laced with wild pepper. They are sold by the dozen at street corners and night markets, a refreshing bite in Guiyang’s humid summer.
