Nanning is the capital of Guangxi, the Zhuang Autonomous Region near the Vietnam border. Laoyou Noodles
“Old Friend Noodles” — the name itself tells you this is comfort food. Rice noodles are stir-fried with garlic, fermented black beans, pickled bamboo shoots, ground pork, and a generous dose of chili. The flavor is sour-spicy-savory in a way that is pure Nanning. Legend says a shopkeeper invented it for a sick friend; the friend recovered, and the noodles became immortal.
Guilin Rice Noodles
Though named for Guangxi’s famous tourism city, Guilin rice noodles are a daily staple across the region including Nanning. The key is the brine — a complex master stock of star anise, cinnamon, fennel, and pork bones. Springy white rice noodles are topped with braised beef slices, pickled long beans, roasted peanuts, and fresh scallions. Dry-mixed or in soup, both styles are essential.
Lemon Duck
A dish that makes Guangxi famous. Duck pieces are simmered with sour bamboo shoots and fresh lemon leaves — the bright citrus perfume cuts through the richness of the duck. It is tangy, aromatic, and unlike any duck dish elsewhere in China. Served on a wide platter for sharing, it is the centerpiece of a Nanning family meal.
