Guilin’s color is Li River cyan—the emerald waters of the Li River reflecting the limestone white of karst peaks. Guilin rice noodles and Guilin’s scenery are the city’s two calling cards.

Guilin Rice Noodles
The brine is the soul of Guilin rice noodles—simmered with a dozen-plus spices, every noodle shop has its own secret recipe. Round rice noodles are blanched in boiling water, scooped out, topped with brine, guoshao (fried pork neck), beef, pickled long beans, peanuts, and chili. Eat it dry first, then when a third remains add bone broth—one bowl, two ways to eat.
Beer Fish
Fresh fish from the Li River, braised in an iron pot with beer, tomatoes, and green peppers. The beer removes the fishiness and enhances freshness; the tomatoes’ acidity and the fish’s sweetness blend perfectly. Yangshuo West Street’s beer fish is the most famous.
