Wuhan · One City, One Color
Wuhan’s color is East Lake Blue — the azure waves of East Lake, the golden glow of Yellow Crane Tower, the pink-white of Wuda cherry blossoms. Two rivers converge, three towns stand together — Wuhaners’ character is like reganmian: direct, no-nonsense, substantial.
“Guozao” (morning breakfast ritual) is a word unique to Wuhaners. At 6 a.m., lines already form before street-side reganmian stalls, doupi shops, and mianwo stands. A bowl of reganmian, mixed while walking, eaten on the go — this is the standard Wuhan morning.
Signature Street Foods
Reganmian (Hot Dry Noodles)
The king of Wuhan breakfast. Alkaline noodles cooked to 80% done, drained and tossed with sesame oil — this is called “tan mian” (noodle shaking). When you’re ready to eat, blanch them again and douse with sesame paste, pickled radish bits, and scallions. Once mixed, every strand is coated in sauce — chewy and springy.
Doupi (Bean Skin)
An egg crepe spread out, layered with glutinous rice, diced pork, shiitake mushrooms, and bamboo shoots, then pan-fried golden on both sides. Aromatic steam rising as it comes off the grill — crispy outside, sticky within. Old Tongcheng’s doupi is the most famous; even Mao Zedong praised it.
Duck Neck
From Jingwu Road to the nation. Soaked in a brine packed with numbing-spicy aromatics, each nibble yields more flavor than meat, the more you chew the more it sings. For Wuhaners watching sports, chatting, drinking — duck neck is the essential companion.
