Pork Stewed Vermicelli
The ultimate Dongbei comfort food, perfected in Changchun’s home kitchens. Thick slices of pork belly are rendered until the fat turns translucent, then simmered with tangy sour cabbage and sweet potato vermicelli noodles. Black pudding rounds add depth and richness. Every spoonful warms you from the inside out.
Snow Clam Stew
A delicacy unique to the Changbai Mountain region. The dried oviduct of the forest frog is rehydrated and gently stewed with rock sugar, goji berries, and red dates until it becomes a translucent, gelatinous soup. Prized for its purported health benefits and delicate, slightly sweet flavor.
Ginseng Chicken Soup
Jilin province produces the world’s finest ginseng, and Changchun cooks know how to use it. A whole young chicken is stuffed with glutinous rice, garlic, jujubes, and a full root of Changbai Mountain ginseng, then simmered for hours. The resulting broth is deeply aromatic, restorative, and served tableside with a flourish.
Icy Broth Cold Noodles
Changchun’s large Korean-Chinese population brings authentic cold noodle culture. Buckwheat noodles are served in a bowl of freezing beef broth—sometimes with actual ice chips floating in it—topped with pickled radish, cucumber, half a boiled egg, and a dollop of mustard. Refreshing in summer, surprisingly popular in winter too.
Sauerkraut Stew
Northeast China’s answer to choucroute garnie. Fermented Napa cabbage, sour and fragrant, is stewed with pork ribs until the meat falls off the bone. A splash of the pickling liquid adds brightness. Served bubbling in a clay pot alongside steamed bread for dipping, this is winter survival food at its finest.

Travel Tips
Visit the Imperial Palace of Manchukuo for a fascinating (and haunting) slice of 20th-century history. The Changchun Film Studio is China’s oldest and offers great tours. For food, head to Guilin Road night market for street snacks and the Korean Quarter for authentic cold noodles. Winter is peak season for stews, but ginseng chicken is enjoyed year-round.
